- 2 medium Bell peppers (red, yellow, orange)
- 2 Corn on the cob
- 1/4 medium Red onion
- 1/4 cup Cilantro
- 2 tablespoons Lime juice
- 2 tablespoons Olive oil
- 1 teaspoon Honey
- 1/4 teaspoon Chili powder
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
Grilling the Vegetables
Preheat your grill to medium heat. Brush the bell peppers and corn on the cob lightly with olive oil. Grill the bell peppers for 10-12 minutes, turning occasionally, until the skins are slightly charred. Grill the corn for 8-10 minutes, turning occasionally, until kernels are tender and slightly charred. If you don't have a grill, you can roast in oven.
Preparing the Peppers
Place the grilled bell peppers in a bowl covered with plastic wrap. Let them steam for 10 minutes. Peel off the blackened skin, remove the stems and seeds, and cut the peppers into strips.
Preparing the Corn
Once the corn is cool enough to handle, cut the kernels off the cob.
Preparing the Remaining Ingredients
Finely chop the red onion and cilantro.
Making the Dressing
In a small bowl, whisk together the lime juice, olive oil, honey, chili powder, salt, and black pepper.
Assembling the Salad
In a large bowl, combine the grilled bell pepper strips, corn kernels, and red onion. Pour the dressing over the salad and toss gently to combine. Garnish with chopped cilantro.
