Mediterranean Quinoa Salad

Ingredients
- 1 cup Quinoa
- 2 cups Water
- 1 medium Cucumber
- 1 pint Cherry Tomatoes
- 1/4 small Red Onion
- 1/2 cup Kalamata Olives
- 1/2 cup Feta Cheese
- 1/4 cup Fresh Parsley
- 2 tablespoons Fresh Mint
- 3 tablespoons Lemon Juice
- 3 tablespoons Olive Oil
- 1 clove Garlic
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
Cook the Quinoa
Rinse the quinoa in a fine-mesh sieve. Combine the quinoa and water in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Fluff with a fork and let cool.
