  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, cold and cubed
  • 2 Eggs
  • 1 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 2 medium Apples, peeled and diced
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup All-purpose flour (for crumble)
  • 1/4 cup Brown sugar (for crumble)
  • 1/4 cup Unsalted butter, cold and cubed (for crumble)

Prepare the Crumble Topping

In a medium bowl, combine 1/2 cup flour and 1/4 cup brown sugar. Cut in 1/4 cup cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside in the refrigerator.

Make the Apple Filling

In a separate bowl, combine the diced apples with 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. Toss to coat evenly. Set aside.

Prepare the Coffee Cake Batter

Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan. In a large bowl, whisk together 2 1/2 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Cut in 1/2 cup cold, cubed butter until the mixture resembles coarse crumbs. In a separate bowl, whisk together 2 eggs, 1 cup sour cream, and 1 teaspoon vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Assemble and Bake

Pour half of the batter into the prepared baking pan. Spread the apple filling evenly over the batter. Pour the remaining batter over the apple filling. Sprinkle the crumble topping evenly over the batter. Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10-15 minutes before slicing and serving.
