Ingredients
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 tablespoon Ground ginger
- 1 teaspoon Ground cinnamon
- 1/4 teaspoon Ground cloves
- 1/4 teaspoon Salt
- 1/2 cup Unsalted butter, softened
- 1/2 cup Packed brown sugar
- 1/3 cup Molasses
- 1 Egg
- 2 cups Powdered sugar
- 2 tablespoons Meringue powder
- 3-4 tablespoons Water
- As needed Miniature candies, for decorating
Preparing the Dough
In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. In a separate bowl, cream together butter and brown sugar until light and fluffy. Beat in molasses and egg. Gradually add dry ingredients to wet ingredients until just combined. Wrap dough in plastic and chill for at least 30 minutes.
Cutting and Baking the Houses
Preheat oven to 350°F (175°C). Roll out dough to 1/8-inch thickness. Use a small house-shaped cookie cutter (or create your own template) to cut out houses. Cut a small slit at the bottom of each house so it can sit on the mug rim. Bake for 8-10 minutes, or until edges are lightly browned. Let cool completely.
Making the Royal Icing
Combine powdered sugar and meringue powder. Gradually add water, mixing until stiff peaks form. Transfer to a piping bag.
Decorating the Houses
Pipe icing onto the gingerbread houses and decorate with miniature candies. Let the icing set completely.
Placing on Mugs
Carefully slide the houses onto the rims of mugs filled with hot chocolate, coffee, or tea. Serve immediately and enjoy!

FAQ
-
Can I make the dough ahead of time?
Yes, the dough can be made a day or two in advance and stored in the refrigerator. -
What if I don't have meringue powder?
Meringue powder helps the icing harden. If you don't have it, you can use egg white powder or omit it, but the icing may not be as stable. -
Can I use a different type of cookie cutter?
Yes, you can use any small cookie cutter shape you like, but make sure to still cut the slit for the mug rim.
