- 6 tablespoons Unsalted butter, melted
- 24 oz Cream cheese, softened
- 1 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 1 ½ cups Heavy cream
- 2 tablespoons Powdered Sugar
Prepare the Oreo Crust
Place 24 Oreo cookies into a food processor and pulse until they are fine crumbs. Alternatively, place the cookies in a resealable bag and crush them with a rolling pin. Mix the Oreo crumbs with the melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to create a crust.
Make the Oreo Filling
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract and beat until combined. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
Combine Filling Ingredients
Gently fold the whipped cream into the cream cheese mixture until well combined. Chop the remaining 12 Oreo cookies into small pieces and fold them into the cheesecake filling.
Assemble the Cheesecake
Pour the Oreo cheesecake filling over the Oreo crust in the springform pan. Smooth the top of the filling with a spatula.
Chill the Cheesecake
Cover the springform pan with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the cheesecake to set completely.
Serve
Before serving, remove the springform pan ring. Slice and serve. Garnish with extra Oreo cookie pieces, if desired.
