Ingredients
- 1 1/4 cups All-purpose flour
- 1/2 cup Unsalted butter, cold and cubed
- 1/4 cup Powdered sugar
- 1/4 teaspoon Salt
- 3-5 tablespoons Ice water
- 1 cup Heavy cream
- 12 ounces Bittersweet chocolate, finely chopped
- 2 tablespoons Unsalted butter, softened
- 1 teaspoon Vanilla extract
- to sprinkle Sea salt flakes
Prepare the Tart Crust
In a large bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
On a lightly floured surface, roll out the dough to a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan. Trim any excess dough.
Prick the bottom of the crust with a fork. Line the crust with parchment paper and fill with pie weights or dried beans. Bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the parchment paper and pie weights and bake for another 10 minutes, or until the crust is golden brown. Let cool completely.
Make the Chocolate Ganache
Place the chopped chocolate in a heatproof bowl.
In a saucepan, heat the heavy cream over medium heat until it just comes to a simmer. Pour the hot cream over the chocolate and let it sit for 1 minute to melt the chocolate.
Whisk the chocolate and cream together until smooth and glossy. Stir in the softened butter and vanilla extract.
Assemble the Tart
Pour the chocolate ganache into the cooled tart crust. Spread evenly. Refrigerate for at least 2 hours, or until the ganache is set.
Before serving, sprinkle with sea salt flakes.
