Matcha Mochi
Soft, chewy, and subtly sweet, these Matcha Mochi are a delightful treat that captures the essence of Japanese confectionery. The earthy notes of matcha complement the glutinous rice flour perfectly.
Ingredients
- 1 cup Glutinous Rice Flour (Mochiko)
- 1/2 cup Granulated Sugar
- 1 tablespoon Matcha Powder (Culinary Grade)
- 1 cup Water
- 1/4 cup Cornstarch (for dusting)
Combine Dry Ingredients
In a microwave-safe bowl, whisk together the glutinous rice flour, granulated sugar, and matcha powder until well combined.
Add Water
Gradually add the water to the dry ingredients, whisking continuously until a smooth batter forms. Ensure there are no lumps.
Microwave
Cover the bowl with microwave-safe plastic wrap, leaving a small vent for steam to escape. Microwave on high for 2 minutes. Remove and stir well. Cover again and microwave for another 1-2 minutes, or until the mochi is translucent and sticky.
Dust and Shape
Generously dust a clean surface with cornstarch. Turn the mochi out onto the cornstarch-covered surface. Be careful, as it will be very hot.
Dust your hands with cornstarch and gently shape the mochi into a log. Cut the log into 12 equal pieces. Shape each piece into a small ball or square. You can also fill the mochi with sweet red bean paste (anko) if desired.
Allow the mochi to cool slightly before serving. Store in an airtight container at room temperature.
