Ingredients
  • 24 Ladyfingers
  • 2 tablespoons Matcha Powder (Culinary Grade)
  • 1 cup Hot Water
  • 16 ounces Mascarpone Cheese
  • 1 1/2 cups Heavy Cream
  • 1/2 cup Granulated Sugar
  • 3 Egg Yolks
  • 1 teaspoon Matcha Powder (for dusting)

Prepare the Matcha Syrup

In a small bowl, whisk together 2 tablespoons of matcha powder and 1 cup of hot water until smooth and no clumps remain. Set aside to cool.

Make the Mascarpone Cream

In a large bowl, whisk together the mascarpone cheese, heavy cream, granulated sugar, and egg yolks until light and fluffy. Be careful not to overwhip.

Assemble the Tiramisu

Dip each ladyfinger briefly in the cooled matcha syrup. Do not soak them for too long, or they will become soggy. Arrange a layer of matcha-soaked ladyfingers at the bottom of a baking dish (approximately 8x8 inches).

Spread half of the mascarpone cream evenly over the ladyfingers. Repeat with another layer of matcha-soaked ladyfingers and the remaining mascarpone cream.

Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

Dust and Serve

Before serving, dust the top of the tiramisu with matcha powder.
