Classic French Meringues

Add Vanilla
Stir in the vanilla extract.
Pipe or Spoon Meringues
Transfer the meringue to a piping bag fitted with a round or star tip. Pipe small mounds onto the prepared baking sheets, leaving a little space between each. Alternatively, you can spoon the meringue onto the baking sheets.
Bake
Bake for 1 to 1.5 hours, or until the meringues are dry and crisp. The meringues should lift easily from the parchment paper. If they are still sticky, bake for another 15-30 minutes.
Cool
Turn off the oven and let the meringues cool completely inside the oven with the door slightly ajar. This helps prevent cracking.
