  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/4 cup Vegetable oil
  • 1 cup Cooked bacon, crumbled
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Chives, chopped (optional)

Get Started

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

Combine Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Make sure there are no lumps.

Combine Wet Ingredients

In a separate bowl, whisk together the eggs, milk, and vegetable oil until well combined.

Combine Wet and Dry

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. A few lumps are okay.

Add Bacon and Cheese

Gently fold in the crumbled bacon, shredded cheddar cheese, and chopped chives (if using).

Fill the Muffin Cups

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake

Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean. The muffins should be golden brown.

Cool and Serve

Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
