Mushroom and Gruyere Quiche

  • 1 14.1 oz roll Refrigerated Pie Crust
  • 8 ounces, sliced Cremini Mushrooms
  • 4 ounces, shredded Gruyere Cheese
  • 6 large Eggs
  • 1 1/2 cups Heavy Cream
  • 1 medium, minced Shallot
  • 2 tablespoons Butter
  • 1 tablespoon, chopped Fresh Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Prepare the Crust

Preheat oven to 375°F (190°C). Unroll the pie crust and fit it into a 9-inch pie plate. Crimp the edges. Prick the bottom of the crust with a fork. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment paper and pie weights and bake for another 5 minutes, or until lightly golden. Let cool slightly.

Sauté the Mushrooms

Melt butter in a large skillet over medium heat. Add minced shallot and cook until softened, about 2 minutes. Add sliced mushrooms and cook until tender and browned, about 8-10 minutes. Stir in chopped thyme, salt, and pepper.

Assemble the Quiche

Sprinkle shredded Gruyere cheese evenly over the bottom of the pre-baked pie crust. Top with the sautéed mushrooms. In a medium bowl, whisk together eggs and heavy cream. Pour the egg mixture over the mushrooms and cheese. Bake for 45-50 minutes, or until the filling is set and the crust is golden brown. Let cool slightly before serving.
