  • 1/2 cup Maple Syrup
  • 1/4 cup Vegan Butter, melted
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Ground Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 2 medium Apples, peeled, cored, and diced
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Lemon Juice

Prepare the Apple Mixture

In a bowl, combine the diced apples, brown sugar, lemon juice, and 1 teaspoon of cinnamon. Mix well and set aside.

Prepare the Custard

In a large bowl, whisk together the plant-based milk, maple syrup, melted vegan butter, vanilla extract, the remaining cinnamon (1 teaspoon), nutmeg, and salt until well combined.

Assemble the Casserole

Grease a 9x13 inch baking dish. Spread half of the cubed bread evenly across the bottom of the dish. Sprinkle the apple mixture over the bread. Top with the remaining bread cubes. Pour the custard mixture evenly over the bread, making sure all the bread is moistened. Gently press down on the bread to help it absorb the custard.

Bake
