  • 4 cups Chicken broth

  • 1/2 pound Italian sausage, removed from casing
  • 1 cup Bell peppers (red, green, yellow), diced
  • 1/2 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1/4 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped

Cook the Grits

In a medium saucepan, bring the chicken broth and salt to a boil. Whisk in the grits and reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally until the grits are thick and creamy.

Sauté the Sausage and Vegetables

While the grits are cooking, heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Add the diced bell peppers and onion and cook until softened, about 5-7 minutes. Stir in the minced garlic during the last minute of cooking.

Combine and Serve

Stir the cooked sausage and pepper mixture into the grits. Stir in the grated Parmesan cheese and fresh parsley. Serve immediately while hot.
