Ingredients
  • 1 1/2 cups All-purpose flour
  • 3 cups Bran flakes cereal
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1/2 cup, packed Brown sugar
  • 2 Eggs
  • 1 1/2 cups Milk
  • 1/4 cup Vegetable oil
  • 1 cup, peeled, cored, and diced Apples
  • 1/2 cup Raisins (optional)

Prepare the Dry Ingredients

In a large bowl, whisk together the flour, bran flakes cereal, baking soda, baking powder, salt, and cinnamon. This ensures even distribution of the leavening agents and spices throughout the batter.

Combine Wet Ingredients

In a separate bowl, whisk together the brown sugar, eggs, milk, and vegetable oil until well combined. Make sure the brown sugar is well incorporated to avoid lumps in the batter.

Combine Wet and Dry

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix, as this can lead to tough muffins. A few lumps are okay.

Add Apples and Raisins

Gently fold in the diced apples and raisins (if using). Distribute them evenly throughout the batter.

Fill Muffin Cups

Line a 12-cup muffin tin with paper liners or grease the tin well. Fill each muffin cup about 2/3 full with batter.

Bake

Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
