A savory and elegant breakfast or brunch option. These crepes are filled with a creamy and flavorful spinach and cheese mixture, making them a satisfying and delicious meal. Perfect for a weekend brunch or a light lunch.
Ingredients
- 1 cup All-Purpose Flour
- 2 Large Eggs
- 1 1/4 cups Milk
- 1/4 teaspoon Salt
- 2 tablespoons Butter, melted
- 5 ounces Fresh Spinach
- 1 cup Ricotta Cheese
- 1/4 cup Grated Parmesan Cheese
- 1 clove Garlic, minced
- Pinch Nutmeg
- To taste Salt and Pepper
- As needed Butter, for greasing
Prepare the Crepe Batter
In a blender, combine the flour, eggs, milk, salt, and melted butter. Blend until smooth. Let the batter rest for at least 15 minutes (or up to an hour) in the refrigerator. This allows the gluten to relax, resulting in more tender crepes.
Cook the Crepes
Heat a lightly buttered crepe pan or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the hot pan, swirling to evenly coat the bottom. Cook for 1-2 minutes per side, or until golden brown. Remove from the pan and set aside.
Prepare the Spinach Filling
Wash and roughly chop the spinach. Heat a skillet over medium heat. Add the spinach and cook until wilted, about 2-3 minutes. Drain any excess liquid.
Combine Filling Ingredients
In a bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, minced garlic, nutmeg, salt, and pepper. Mix well.
Fill the Crepes
Place a spoonful of the spinach and cheese mixture in the center of each crepe. Fold the crepe in half, then in half again to form a triangle, or roll it up like a burrito.
Bake or Serve Immediately
Optional: Place the filled crepes in a baking dish and bake at 350°F (175°C) for 10-15 minutes, or until heated through. Alternatively, serve immediately. You can garnish with a sprinkle of Parmesan cheese or a dollop of ricotta.
