Ingredients
  • 1 cup Chickpea Flour
  • 1 cup Water
  • 2 tablespoons Nutritional Yeast
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Olive Oil
  • 1/2 cup, cooked Black Beans
  • 1/2 cup Corn
  • To taste Salsa
  • 1/2 , sliced (optional) Avocado
  • To taste , chopped (optional) Cilantro

Preparing the Spicy Chickpea Flour Batter

In a large bowl, whisk together the chickpea flour, water, nutritional yeast, chili powder, cumin, salt, and black pepper until smooth. Make sure there are no lumps. Let the batter rest for at least 5 minutes to allow the chickpea flour to fully absorb the water.

Preparing the Filling

In a separate bowl, combine the cooked black beans and corn. Mix gently to combine. You can also add other vegetables if desired, such as diced bell peppers or onions.

Cooking the Omelette

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the chickpea flour batter into the skillet, spreading it evenly to form a thin layer. Cook for 5-7 minutes, or until the bottom is set and the edges start to lift. Gently loosen the edges with a spatula.

Adding the Filling and Folding

Spoon half of the black bean and corn mixture onto one side of the omelette. Carefully fold the other side of the omelette over the filling. Cook for another 2-3 minutes, or until heated through. Repeat with the remaining batter and filling.

Serving

Slide the spicy chickpea flour omelette onto a plate. Top with your favorite salsa, sliced avocado (optional), and chopped cilantro (optional). Serve immediately.
