Apple Cinnamon Crumble Coffee Cake

Prepare the Apples
Peel, core, and dice the apples into small pieces. In a small bowl, mix the diced apples with ground cinnamon. Set aside.
Make the Crumble Topping
In a medium bowl, combine the flour, brown sugar, and cold cubed butter. Use a pastry blender or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs. Set aside.
Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
