Mediterranean Toast with Feta and Roasted Red Peppers
Transport your taste buds to the Mediterranean with this flavorful toast. Creamy feta, sweet roasted red peppers, briny olives, and a drizzle of olive oil create a vibrant and satisfying breakfast or brunch.
Ingredients
- 2 slices Slices of Bread (Ciabatta or Rustic Bread recommended)
- 2 oz Feta Cheese
- 1/4 cup Roasted Red Peppers (jarred or homemade)
- 1 tbsp Kalamata Olives (pitted and halved)
- 1 tbsp Olive Oil
- 1 sprig Fresh Oregano (optional)
- To taste Salt and Pepper
Toast the Bread
Toast the bread slices to a golden brown. You want them to be sturdy enough to hold the toppings. A toaster or toaster oven works well.
Prepare the Toppings
If using whole feta, crumble it into a small bowl. Slice the roasted red peppers into strips if they are whole. Halve the Kalamata olives if they are not already pitted and halved.
Assemble the Toast
Place the toasted bread slices on a plate. Spread the crumbled feta evenly over each slice. Arrange the roasted red peppers and Kalamata olives on top of the feta. Drizzle with olive oil. Season with salt and pepper to taste. Garnish with fresh oregano, if desired.
Serving Suggestions
Serve immediately and enjoy! This toast pairs well with a side of mixed greens or a simple tomato salad. For a more substantial meal, add a hard-boiled egg.
FAQ
-
Can I use a different type of cheese?
Yes, you can substitute feta with other cheeses like goat cheese, ricotta cheese, or even a soft mozzarella. The flavor profile will be different, but still delicious. -
Where can I find roasted red peppers?
Roasted red peppers are readily available in jars at most grocery stores. You can also easily roast them yourself. Simply roast whole red bell peppers under the broiler until the skin is blackened. Then, place them in a bowl covered with plastic wrap to steam. Once cooled, the skins will easily peel off. -
Can I add other vegetables?
Absolutely! Cherry tomatoes, cucumbers, or spinach would be excellent additions to this toast. Feel free to customize it to your liking.
