Ingredients
  • 3 Large Eggs
  • 1 tbsp Unsalted Butter
  • Pinch Salt
  • Pinch Black Pepper
  • To taste Optional Filling (cheese, herbs)

Preparation

Crack the eggs into a bowl. Add a pinch of salt and pepper. Whisk gently with a fork until the yolks and whites are just combined. Avoid over-whisking, as this can make the omelette tough.

Cooking

Place a non-stick 8-inch skillet over medium heat. Add the butter and let it melt completely. The pan should be hot enough that a drop of the egg mixture sizzles gently. Pour the egg mixture into the hot skillet. Immediately reduce the heat to low-medium.

Creating the Omelette

Let the eggs cook undisturbed for about 30 seconds, until a thin layer sets around the edges. Use a spatula to gently push the cooked edges towards the center of the pan, tilting the pan so that the uncooked egg flows underneath. Continue doing this until most of the egg is set but the top is still slightly wet.

Adding Filling (Optional)

If using a filling, sprinkle it over one half of the omelette now. Cook for another 15-30 seconds until the filling is heated through and the eggs are set but still moist.

Folding and Serving

Gently fold the omelette in half, using the spatula. Slide the omelette onto a plate. For a classic French presentation, you can shape the omelette into a torpedo shape by tapping the pan handle sharply against the plate as you slide it out. Serve immediately.

FAQ

  • Why is my omelette tough?

Over-whisking the eggs or cooking the omelette over too high of heat can cause it to become tough. Be gentle when whisking the eggs and keep the heat at low-medium.
  • How do I prevent my omelette from sticking to the pan?

Use a good quality non-stick skillet and make sure it is properly heated before adding the butter. Also, use enough butter to coat the pan evenly.
  • What are some good omelette fillings?

Cheese (cheddar, Gruyere, feta), herbs (chives, parsley, dill), cooked vegetables (mushrooms, spinach, onions), and cooked meats (ham, bacon) are all great options.
