Ingredients
- 3 cups Rolled Oats
- 1 cup Mixed Nuts (almonds, walnuts, pecans)
- 1/2 cup Seeds (pumpkin, sunflower, flax)
- 1 cup Dried Fruit (raisins, cranberries, apricots)
- 1/2 cup Coconut Flakes (unsweetened)
- 1/2 cup Maple Syrup
- 1/4 cup Coconut Oil (melted)
- 2 tablespoons Brown Sugar
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Salt
Preheat and Prepare
Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper. This will prevent the granola from sticking and make cleanup easier.
Combine Dry Ingredients
In a large bowl, combine the rolled oats, mixed nuts, seeds, coconut flakes, brown sugar, cinnamon, and salt. Mix well to ensure all ingredients are evenly distributed.
Mix Wet Ingredients
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract. Make sure the coconut oil is completely melted for even distribution.
Combine Wet and Dry
Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated. Use a spatula to scrape the bottom of the bowl to ensure all oats and nuts are moistened.
Bake the Granola
Spread the granola mixture in an even layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown and fragrant. Watch carefully to prevent burning, especially around the edges.
Add Dried Fruit and Cool
Remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried fruit. The granola will crisp up as it cools.
Store and Serve
Store the cooled granola in an airtight container at room temperature for up to 2 weeks. Serve with milk, yogurt, or as a topping for smoothie bowls. Enjoy!
