Spinach and Feta Breakfast Casserole

  • 10 ounces Frozen spinach
  • 4 ounces Feta cheese
  • 8 Eggs
  • 1 1/2 cups Milk

  • 1/4 cup Diced red onion

  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Nutmeg
  • 1 tablespoon Olive oil

Prepare the Spinach

Thaw the frozen spinach and squeeze out any excess water. This is important to prevent a soggy casserole. Set aside.

Sauté Onion and Garlic

Heat the olive oil in a skillet over medium heat. Add the diced red onion and minced garlic. Sauté until softened, about 3-5 minutes.

Combine Spinach, Onion, and Garlic

In a large bowl, combine the sautéed onion and garlic with the squeezed spinach. Crumble the feta cheese over the mixture and stir gently to combine.

Prepare the Egg Custard

In a separate bowl, whisk together the eggs, milk, heavy cream, salt, pepper, and nutmeg. Whisk until the mixture is smooth and well combined.

Assemble the Casserole

Grease an 8x8 inch baking dish. Spread the spinach, feta, onion, and garlic mixture evenly in the dish. Pour the egg custard over the top, making sure to cover all the ingredients. Gently press down on the mixture to ensure everything is submerged in the egg custard.

Refrigerate Overnight

Cover the baking dish with plastic wrap and refrigerate overnight (or for at least 4 hours). This allows the flavors to meld together.

Bake the Casserole

Preheat oven to 375°F (190°C). Remove the plastic wrap from the baking dish and bake for 35-45 minutes, or until the casserole is golden brown and set. A knife inserted into the center should come out clean. If the top starts to brown too quickly, you can loosely cover it with aluminum foil.
