Chilaquiles Rojos: A Classic Mexican Breakfast

Ingredients
- 12 Corn Tortillas
- For frying Vegetable Oil
- 6 , stemmed and seeded Dried Guajillo Chiles
- 1 , stemmed and seeded Dried Ancho Chile
- 4 medium Roma Tomatoes
- 1/2 medium, chopped Onion
- 2 cloves, minced Garlic
- 1 cup Chicken Broth
- 1/2 teaspoon Mexican Oregano
- To taste Salt
- To taste Black Pepper
- 4 ounces, crumbled Queso Fresco
- 1/2 cup Mexican Crema
- 4 , fried or scrambled Eggs
- 2 tablespoons, chopped, for garnish Cilantro
Prepare the Red Sauce
Soak the dried guajillo and ancho chiles in hot water for 20-30 minutes, or until softened. Drain the chiles and place them in a blender with the tomatoes, onion, garlic, chicken broth, Mexican oregano, salt, and pepper. Blend until smooth. Strain the sauce through a fine-mesh sieve to remove any seeds or skins. Discard solids.
Fry the Tortilla Chips
Cut the corn tortillas into quarters. Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Fry the tortilla chips in batches until golden brown and crispy. Drain on paper towels. Alternatively, you can bake the tortilla chips in a preheated oven at 350°F (175°C) until crispy.
Simmer the Chilaquiles
Pour the red sauce into the same skillet and bring to a simmer over medium heat. Add the fried tortilla chips to the sauce and toss gently to coat. Cook for 2-3 minutes, or until the chips are softened but still slightly crispy. Be careful not to overcook, or the chips will become soggy.
Serve and Garnish
Divide the chilaquiles among plates. Top with crumbled queso fresco, Mexican crema, fried or scrambled eggs, and chopped cilantro. Serve immediately.
