Tomatillo Avocado Salsa

A creamy and bright salsa made with tomatillos, avocado, and a hint of lime. This salsa provides a refreshing and vibrant counterpoint to the richness of eggs and tortillas in huevos rancheros. The avocado adds a silky texture and a mild, nutty flavor that complements the tangy tomatillos.

Ingredients
  • 1 pound Tomatillos
  • 1 ripe Avocado
  • 1/4 medium White Onion
  • 1/2 - 1 to taste Serrano Pepper
  • 1/4 cup, chopped Cilantro
  • 2 tablespoons Lime Juice
  • 1 clove Garlic
  • to taste Salt
  • 2-3 tablespoons (optional) Water

Prepare Tomatillos

Remove the husks from the tomatillos and rinse them thoroughly. Place them in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for about 5 minutes, or until the tomatillos are slightly softened and have changed color.

Cool and Blend

Drain the tomatillos and let them cool slightly. In a blender or food processor, combine the tomatillos, avocado, onion, serrano pepper (remove seeds for less heat), cilantro, lime juice, and garlic. Blend until smooth.

Adjust Consistency

If the salsa is too thick, add a tablespoon or two of water to reach your desired consistency.

Season to Taste

Taste the salsa and add salt as needed. You may also want to add a squeeze of lime juice for extra tang.

Serve

Serve immediately with huevos rancheros, breakfast burritos, or as a dip for tortilla chips. The salsa is best when fresh, as the avocado can brown over time. Store in an airtight container in the refrigerator for up to 24 hours. Press plastic wrap directly onto the surface of the salsa to help prevent browning.

FAQ

  • Can I use a different type of pepper?

Yes, you can use jalapeño instead of serrano, or omit the pepper altogether for a mild salsa.
  • How can I prevent the avocado from browning?

Adding lime juice helps prevent browning. Also, store the salsa in an airtight container with plastic wrap pressed directly onto the surface.
  • Can I roast the tomatillos instead of boiling them?

Yes, roasting the tomatillos will add a smoky flavor to the salsa. Roast them at 400°F (200°C) for about 15-20 minutes, or until they are slightly softened and browned.
