  • 4 Eggs
  • 2 tablespoons Olive oil
  • 1/2 Onion, chopped
  • 1/2 Green bell pepper, chopped
  • 1 Jalapeño, minced (optional)
  • 2 cloves Garlic, minced
  • 1 can (14.5 oz) Diced tomatoes
  • 1/2 cup Tomato sauce
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Oregano
  • to taste Salt and pepper
  • to taste Optional toppings: queso fresco, cilantro, avocado, sour cream

Prepare the Ranchero Sauce

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion, bell pepper, and jalapeño (if using) and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant. Stir in the diced tomatoes, tomato sauce, chili powder, cumin, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly.

Warm the Tortillas and Beans

While the sauce is simmering, warm the tortillas in a dry skillet or oven until pliable. Warm the refried beans in a separate saucepan over low heat, stirring occasionally, or microwave them until heated through.

Fry the Eggs

In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the eggs to your desired doneness (sunny-side up, over easy, etc.). Season with salt and pepper.

Assemble and Serve

Spread a layer of refried beans on each warm tortilla. Top with a fried egg and a generous spoonful of ranchero sauce. Garnish with your favorite toppings such as queso fresco, cilantro, avocado, and sour cream. Serve immediately.
