  • 1 cup Frozen Corn
  • 1/4 , diced Red Onion
  • 1/2 , diced Red Bell Pepper
  • 1 tablespoon Olive Oil
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Smoked Paprika
  • 1/4 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Vegan Cheese Shreds (optional)

  • 2 Large Flour Tortillas
  • 2 tablespoons, chopped (optional) Fresh Cilantro

Sauté the Vegetables
