Chorizo and Egg Breakfast Burrito

Ingredients
- 8 oz Mexican Chorizo
- 6 Large Eggs
- 1 cup Shredded Cheddar Cheese
- 4 Flour Tortillas (large)
- 1/2 cup Diced Onion
- 1/2 cup Diced Bell Pepper (optional)
- 1 tbsp Olive Oil
- To taste Salt and Pepper
- Your favorite hot sauce (optional)
Prepare the Chorizo
Remove the chorizo from its casing (if applicable). Heat a large skillet over medium heat. Add the chorizo and cook, breaking it up with a spoon, until it's browned and cooked through. Drain off any excess grease. Set aside.
Sauté Vegetables (optional)
If using, add a tablespoon of olive oil to the same skillet. Add the diced onion and bell pepper. Cook until softened, about 5 minutes. Remove from skillet and set aside.
