Mushroom and Swiss Omelette
A savory and comforting omelette filled with earthy mushrooms and nutty Swiss cheese. A hearty vegetarian option for breakfast or brunch.
Ingredients
- 3 Eggs
- 1 cup Mushrooms
- 1/4 cup Swiss Cheese
- 1 tablespoon Butter
- to taste Salt
- to taste Black Pepper
- 1/4 cup Onion
Prepare the Mushrooms
Clean the mushrooms with a damp paper towel to remove any dirt. Slice the mushrooms into thin slices. Finely chop the onion.
Sauté the Mushrooms and Onions
Melt the butter in a non-stick skillet over medium heat. Add the sliced mushrooms and chopped onions and sauté for 5-7 minutes, or until they are softened and lightly browned. Season with salt and pepper. Remove the mushrooms and onions from the skillet and set aside.
Prepare the Eggs
In a bowl, whisk the eggs together with a fork or whisk until light and frothy. Season with salt and pepper to taste.
Cook the Omelette
Return the skillet to medium heat. Pour the egg mixture into the skillet. Let it cook for a minute or two, until the bottom starts to set but the top is still slightly wet. Gently lift the edges of the omelette with a spatula to allow the uncooked egg to flow underneath.
Add the Filling
Once the omelette is mostly set but still slightly soft, sprinkle the sautéed mushrooms, onions and shredded Swiss cheese over one half of the omelette.
Fold and Finish
Carefully fold the other half of the omelette over the filling. Cook for another minute or two, until the cheese is melted and the omelette is heated through. Be careful not to overcook the omelette.
Serve
Slide the omelette onto a plate and serve immediately. Garnish with a sprinkle of fresh chives or a side of toast, if desired.
