Spicy Huevos Rancheros with Black Beans and Chorizo

Ingredients
- 4 Corn tortillas
- 1 cup Black beans, cooked
- 4 oz Mexican chorizo, removed from casing
- 4 Eggs
- 2 tablespoons Olive oil
- 1/2 Onion, chopped
- 1/2 Red bell pepper, chopped
- 2 cloves Garlic, minced
- 1 can (14.5 oz) Diced tomatoes
- 1-2 Chipotle peppers in adobo sauce, minced
- 1 tablespoon Adobo sauce
- 1/2 teaspoon Cumin
- 1/4 teaspoon Smoked paprika
- to taste Salt and pepper

Prepare the Chipotle Ranchero Sauce
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion and red bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant. Stir in the diced tomatoes, chipotle peppers in adobo sauce, adobo sauce, cumin, smoked paprika, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally, until the sauce has thickened slightly.

While the sauce is simmering, cook the chorizo in a separate skillet over medium heat, breaking it up with a spoon as it cooks. Cook until the chorizo is browned and cooked through.

Warm the tortillas in a dry skillet or oven until pliable. Warm the cooked black beans in a separate saucepan over low heat, stirring occasionally, or microwave them until heated through.
Fry the Eggs
In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the eggs to your desired doneness (sunny-side up, over easy, etc.). Season with salt and pepper.
Assemble and Serve
