Ingredients
- 4 Large Flour Tortillas
- 6 Eggs
- 6 slices Bacon
- 1 cup Diced Potatoes
- 1 cup Shredded Cheddar Cheese
- 1/4 cup Diced Onion
- 1/4 cup Diced Bell Pepper
- 1 tablespoon Olive Oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- to taste Optional Toppings
Prepare the Bacon
Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Crumble or chop the bacon into small pieces.
Cook the Potatoes and Vegetables
Heat the olive oil in the same skillet over medium heat. Add the diced potatoes, onion, and bell pepper. Season with salt and pepper. Cook until the potatoes are tender and lightly browned, about 10-12 minutes, stirring occasionally.
Scramble the Eggs
While the potatoes are cooking, whisk the eggs in a bowl. Once the potatoes are cooked, push them to one side of the skillet and pour the eggs into the other side. Cook the eggs, stirring occasionally, until they are set but still slightly moist.
Assemble the Burritos
Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them more pliable. Lay a tortilla flat and spread a layer of the scrambled eggs, followed by the cooked potatoes and vegetables, crumbled bacon, and shredded cheddar cheese. Add any optional toppings you like.
Wrap the Burritos
Fold in the sides of the tortilla over the filling, then fold up the bottom edge and roll the burrito tightly. If desired, you can sear the burrito in the skillet or grill until golden brown.
