Ingredients
  • 1 block (14-16 oz) Firm or Extra-Firm Tofu
  • 1/4 cup, oil-packed, drained Sun-Dried Tomatoes
  • 1/4 cup, pitted and sliced Kalamata Olives
  • 1/4 medium, finely chopped Red Onion
  • 2 cloves, minced Garlic
  • 2 tablespoons, chopped Fresh Basil
  • 1 tablespoon, chopped Fresh Oregano
  • 2 tablespoons Nutritional Yeast
  • 1/4 teaspoon Black Salt (Kala Namak)
  • 1 tablespoon Olive Oil

Prepare the Tofu

Press the tofu to remove excess water. Wrap the tofu in paper towels and place a heavy object on top for about 15-20 minutes. Once pressed, crumble the tofu into a bowl.

Prepare the Sun-Dried Tomatoes

If using oil-packed sun-dried tomatoes, drain them well and chop them into smaller pieces.

Sauté the Aromatics

Heat the olive oil in a skillet over medium heat. Add the finely chopped red onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the Tofu, Tomatoes, and Olives

Add the crumbled tofu, chopped sun-dried tomatoes, and sliced Kalamata olives to the skillet. Stir in the nutritional yeast, black salt, and black pepper. Mix well to combine all ingredients.

Incorporate Fresh Herbs

Stir in the chopped fresh basil and oregano. Cook the tofu scramble, stirring occasionally, for about 8-10 minutes, or until heated through and slightly browned.

Serve and Garnish
