Ingredients
  • 4 medium Roma Tomatoes
  • 1 medium Jalapeño Pepper
  • 1-2 canned Chipotle Pepper in Adobo Sauce
  • 2 cloves Garlic
  • 1/4 medium White Onion
  • 1 tablespoon Lime Juice
  • 1/4 cup, chopped Cilantro
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Prepare the Vegetables

Preheat your oven to 400°F (200°C). Wash the tomatoes and jalapeño. Cut the tomatoes in half and remove the seeds from the jalapeño if you prefer a milder salsa. Leave some seeds for more heat.

Roast the Vegetables

Place the halved tomatoes and jalapeño pepper on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 20-25 minutes, or until the tomatoes are softened and slightly charred.

Blend the Salsa

Let the roasted vegetables cool slightly. In a blender or food processor, combine the roasted tomatoes, jalapeño, chipotle pepper (with a little of the adobo sauce for extra flavor), garlic, onion, lime juice, and cilantro. Blend until you reach your desired consistency. For a chunkier salsa, pulse a few times. For a smoother salsa, blend until smooth.

Adjust Seasoning

Taste the salsa and adjust the seasoning as needed. Add more salt, pepper, or lime juice to taste. If the salsa is too spicy, add a little more tomato. If it's not spicy enough, add another chipotle pepper.

Serve

Serve immediately with huevos rancheros, breakfast tacos, or any other breakfast dish. This salsa can also be stored in an airtight container in the refrigerator for up to 3 days.

FAQ

  • Can I use canned tomatoes?

Yes, you can use canned diced tomatoes if fresh tomatoes are not available. However, roasting fresh tomatoes will give the salsa a richer, sweeter flavor. Drain the canned tomatoes before roasting them for a shorter time (about 15 minutes).
  • How do I make the salsa less spicy?

Remove the seeds and membranes from the jalapeño pepper before roasting. You can also reduce the amount of chipotle pepper or omit it entirely.
  • Can I freeze this salsa?

Yes, you can freeze the salsa in an airtight container for up to 2 months. Thaw it in the refrigerator overnight before serving. The texture may change slightly after freezing.
