Chocolate Peanut Butter Granola

  • 3 cups Rolled Oats (Old Fashioned)
  • 1 cup Peanuts (Roasted, unsalted)
  • 1/4 cup Cocoa Powder (Unsweetened)
  • 2 tablespoons Chia Seeds
  • 1/2 cup Peanut Butter (Natural)
  • 1/2 cup Maple Syrup
  • 1/4 cup Coconut Oil (Melted)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1/2 cup Chocolate Chips (Optional)

Preheat & Prep

Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper for easy cleanup.

Combine Dry Ingredients

In a large bowl, combine rolled oats, peanuts, cocoa powder, chia seeds, and salt. Mix well to distribute evenly.

Combine Wet Ingredients

In a separate bowl, whisk together peanut butter, maple syrup, melted coconut oil, and vanilla extract until smooth.

Mix Wet & Dry Ingredients

Pour the wet ingredients over the dry ingredients and stir until the oats are evenly coated. Be thorough to avoid clumps of dry ingredients.

Bake

Spread the mixture in an even layer on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant. Keep a close eye on it to prevent burning due to the cocoa powder.

Cool & Add Chocolate Chips

Remove from oven and let cool completely on the baking sheet. Once cool, gently stir in chocolate chips (if using). The granola will crisp up as it cools.
