Creamy Goat Cheese Crostini with Roasted Garlic and Mushrooms

Ingredients
- 1 loaf Baguette
- 4 oz Goat Cheese
- 8 oz Mixed Mushrooms (cremini, shiitake)
- 1 head Garlic
- 4 tablespoons Olive Oil
- 1 tablespoon Fresh Rosemary

Roast the Garlic
Preheat oven to 400°F (200°C). Cut the top off the garlic head to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast for 25-30 minutes, or until the garlic is soft and fragrant. Let cool slightly before squeezing the roasted garlic cloves out of their skins.
Prepare the Baguette
While the garlic is roasting, slice the baguette into 1/2-inch thick rounds. Arrange the slices on a baking sheet and brush lightly with olive oil. Bake for 8-10 minutes, or until golden brown and crispy. Let cool slightly.
Sauté the Mushrooms
Clean the mushrooms and slice them thinly. Heat the remaining olive oil in a large skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until they release their liquid and become browned. This will take approximately 10-15 minutes.
Add Roasted Garlic and Rosemary
Add the squeezed roasted garlic and chopped rosemary to the skillet with the mushrooms. Cook for another minute, until fragrant. Season with salt and pepper to taste.
Assemble the Crostini
Spread a generous amount of softened goat cheese onto each baguette slice. Top with the mushroom and roasted garlic mixture. Serve immediately or at room temperature.
