Ingredients
  • 24 Fresh Littleneck Clams
  • 1/4 cup Olive Oil
  • 4 cloves Garlic
  • 2 tsp Dried Oregano
  • 1/2 cup Fresh Parsley
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Pecorino Romano Cheese
  • 1 Lemon
  • to taste Salt
  • to taste Black Pepper

Preparing the Clams

Begin by thoroughly scrubbing the clams under cold running water to remove any sand or debris. Discard any clams that are open and do not close when tapped.

Making the Breadcrumb Mixture

In a large bowl, combine the breadcrumbs, grated Pecorino Romano cheese, dried oregano, chopped fresh parsley, minced garlic, salt, and black pepper. Drizzle with olive oil and mix well until the breadcrumbs are evenly coated.

Arranging the Clams

Preheat your oven to 400°F (200°C). Arrange the clams, hinge-side down, in a baking dish. You can use a baking dish specifically designed for clams, or create a bed of rock salt to help stabilize them.

Filling and Baking

Spoon the breadcrumb mixture generously over each clam, pressing lightly to adhere. Bake for 12-15 minutes, or until the clams are cooked through and the breadcrumbs are golden brown. The clams should open during baking; discard any that do not open.

Serving

Remove the baked clams from the oven and squeeze fresh lemon juice over them. Serve immediately while hot. Garnish with extra parsley if desired.
