Spicy Black Bean & Corn Stuffed Zucchini Boats with Chipotle Crema

Ingredients
- 3 medium Zucchini
- 1 can Black Beans
- 1 cup Corn
- 1/2 cup Red Bell Pepper
- 1/4 cup Red Onion
- 1 Jalapeño
- 1/4 cup Cilantro
- 1 teaspoon Chili Powder
- 1/2 teaspoon Cumin
- 1/4 teaspoon Smoked Paprika
- 1 tablespoon Olive Oil
- 1 tablespoon Lime Juice

- 1/2 cup Sour Cream
- 1 Chipotle Pepper in Adobo Sauce
Prepare the Zucchini
Preheat oven to 375°F (190°C). Wash the zucchini and cut them in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch border. Chop the scooped-out zucchini flesh and set aside.
Sauté the Vegetables
