Pulled Pork Mini Sliders with Coleslaw

Ingredients
- 3 lbs Pork Shoulder (Boston Butt)
- 2 tbsp Brown Sugar
- 1 tbsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dry Mustard
- 1/4 tsp Cayenne Pepper (optional)
- 1/2 cup Apple Cider Vinegar
- 1 cup Water
- 12 each Slider Buns
- 4 cups Coleslaw Mix
- 1/2 cup Mayonnaise
- 2 tbsp Apple Cider Vinegar (for coleslaw)
- 1 tbsp Granulated Sugar
- 1 tsp Dijon Mustard
- 1/4 tsp Celery Seed
- to taste Salt
- to taste Black Pepper
Preparing the Pork Rub
In a bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, dry mustard, and cayenne pepper (if using). Mix well.
Rubbing the Pork
Rub the spice mixture all over the pork shoulder, ensuring it's evenly coated.
Slow Cooking the Pork (Slow Cooker)
Place the rubbed pork shoulder in a slow cooker. Add the apple cider vinegar and water to the bottom of the slow cooker. Cook on low for 6-8 hours, or until the pork is very tender and easily shreds with a fork.
Slow Cooking the Pork (Oven)
Preheat oven to 300°F (150°C). Place the rubbed pork shoulder in a Dutch oven or oven-safe pot. Add the apple cider vinegar and water. Cover and bake for 3-4 hours, or until the pork is very tender and easily shreds with a fork.
Shredding the Pork
Remove the pork from the slow cooker or oven. Let it rest for 15-20 minutes, then shred it using two forks. Discard any excess fat.
Making the Coleslaw
In a separate bowl, whisk together the mayonnaise, apple cider vinegar (for coleslaw), granulated sugar, Dijon mustard, celery seed, salt, and pepper.
Combining the Coleslaw
Pour the dressing over the coleslaw mix and toss to combine. Refrigerate for at least 30 minutes to allow the flavors to meld.
Assembling the Sliders
Slice the slider buns in half. Pile the shredded pork onto the bottom buns, top with coleslaw, and place the top buns on.
Serving the Sliders
Serve the pulled pork mini sliders immediately and enjoy!
