  • 2 cups Pre-cooked corn flour (Harina P.A.N.)
  • 2 1/2 cups Warm water
  • 1 teaspoon Salt
  • 2 cups Cooked chicken breast
  • 2 medium, ripe Avocado
  • 1/2 cup Mayonnaise
  • 1/4 cup, finely chopped Onion
  • 2 tablespoons, chopped Cilantro
  • 1 tablespoon Lime juice
  • to taste Hot sauce (optional)
  • 2 tablespoons, for cooking Oil

Making the Arepa Dough

In a large bowl, combine the pre-cooked corn flour and salt. Gradually add the warm water, mixing with your hands until a soft and pliable dough forms. Knead for a few minutes until the dough is smooth and doesn't stick to your hands. If the dough is too dry, add a little more water. If it's too wet, add a little more corn flour.

Shaping the Arepas

Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten it into a disc about 4 inches in diameter and 1/2 inch thick. Make sure the edges are smooth and even.

Cooking the Arepas

Heat a lightly oiled griddle or frying pan over medium heat. Cook the arepas for about 5-7 minutes per side, or until they are golden brown and slightly puffed up. Alternatively, you can bake the arepas in a preheated oven at 350°F (175°C) for about 20-25 minutes.

In a medium bowl, shred or dice the cooked chicken breast. Mash the avocado with a fork. Add the mayonnaise, onion, cilantro, lime juice, and hot sauce (if using) to the bowl. Mix well to combine. Season with salt and pepper to taste.
