Preparing the Beef

Making Crispy Capers

Rinse the capers and pat them dry with paper towels. Heat a small amount of olive oil in a pan over medium heat. Fry the capers for 2-3 minutes, or until crispy. Remove them with a slotted spoon and place them on paper towels to drain.

Adding the Flavors

Drizzle the beef with truffle oil, extra virgin olive oil, and lemon juice. Season with sea salt and freshly ground black pepper.

Garnishing and Serving

Sprinkle the carpaccio with shaved Parmesan cheese and crispy capers. Garnish with microgreens. Serve immediately.

FAQ

  • Can I use a different type of oil instead of truffle oil?

While truffle oil adds a distinct flavor, you can substitute it with a high-quality extra virgin olive oil or infused garlic oil for a different flavor profile.
  • How do I store leftover carpaccio?

Carpaccio is best served immediately. Leftovers should be discarded due to the raw nature of the beef.
  • What kind of microgreens are best for carpaccio?

Arugula, radish, or pea shoots microgreens work well. Choose microgreens that have a peppery or slightly spicy flavor to complement the beef.
