Ingredients
- 2 medium Eggplant
- 1 cup Quinoa
- 2 cups Vegetable Broth

- 2 tablespoons Fresh Mint
- 3 tablespoons Olive Oil
- 2 cloves Garlic

Prepare the Quinoa

Grill the Eggplant
