Ingredients
  • 12 Medjool Dates
  • 4 oz Spicy Chorizo
  • 2 oz Manchego Cheese
  • 2 tbsp Fresh Parsley
  • 1 tbsp Olive oil

Prepare the Chorizo

Remove the chorizo from its casing. Heat olive oil in a skillet over medium heat. Crumble the chorizo into the skillet and cook, stirring occasionally, until browned and cooked through. Drain any excess fat.

Stuff the Dates

Gently make a slit lengthwise in each date and remove the pit. Fill each date with a spoonful of the cooked chorizo.

Add the Cheese

Top each stuffed date with a small piece of Manchego cheese.

Bake (Optional)

For a warm and melty appetizer, place the stuffed dates on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 5-7 minutes, or until the cheese is slightly melted. Alternatively, you can broil for 1-2 minutes, watching carefully to prevent burning.

Garnish and Serve

Garnish with fresh parsley and serve immediately. These can be served warm or at room temperature.
