Ingredients
  • 2 medium, diced Ripe Mangoes
  • 2 medium, diced Ripe Avocados
  • 1/2 medium, diced Red Bell Pepper
  • 1/4 cup, thinly sliced Red Onion
  • 1 small, seeded and minced Jalapeño Pepper
  • 1/4 cup, chopped Fresh Cilantro
  • 3 tablespoons, freshly squeezed Lime Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Honey
  • 1/2 teaspoon Chili Powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Prepare the Fruits and Vegetables

Dice the mangoes and avocados into bite-sized pieces. Dice the red bell pepper. Thinly slice the red onion. Mince the jalapeño pepper (remove seeds for less heat). Place all ingredients in a large bowl.

Add Cilantro

Chop the fresh cilantro and add it to the bowl. Cilantro adds a refreshing herbal note that complements the other flavors.

Make the Chili-Lime Vinaigrette

In a small bowl, whisk together the lime juice, olive oil, honey, chili powder, salt, and pepper. Adjust the amount of chili powder to your preference for heat.

Combine and Chill

Pour the chili-lime vinaigrette over the mango, avocado, bell pepper, red onion and jalapeño mixture. Gently toss everything together until well combined. Cover the bowl and refrigerate for at least 20 minutes to allow the flavors to meld. This also helps the salad stay cool and refreshing.

Serve

Serve the salad chilled. This salad pairs well with grilled chicken, fish, or shrimp. It can also be served as a standalone appetizer or side dish. Garnish with extra cilantro if desired.
