Spicy Chorizo and Cheddar Fondue
A flavorful and spicy cheese fondue featuring chorizo and cheddar cheese. Perfect for a game-day appetizer or a cozy night in. Serve with tortilla chips, pretzel bites, or crusty bread.
Ingredients
- 1 lb Sharp cheddar cheese, grated
- 4 oz Mexican chorizo, casing removed
- 4 oz Cream cheese, softened
- 1 can (10 oz) Diced tomatoes and green chilies (such as Rotel), drained
- 2 Green onions, sliced
- 1/2 tsp Garlic powder
- 1/4 tsp Chili powder
- As desired Tortilla chips
- As desired Pretzel bites
- As desired Crusty bread, cubed
Cook the Chorizo
In a skillet over medium heat, cook the chorizo, breaking it apart with a spoon, until browned and cooked through. Drain any excess grease.
Combine Ingredients
In a fondue pot or slow cooker, combine the cooked chorizo, cheddar cheese, cream cheese, diced tomatoes and green chilies, green onions, garlic powder, and chili powder. Stir well to combine.
Melt the Cheese
If using a fondue pot, heat over low heat, stirring occasionally, until the cheese is melted and the mixture is smooth and creamy. If using a slow cooker, cook on low for 1-2 hours, stirring occasionally, until the cheese is melted and the mixture is smooth.
Serve
