Ingredients
- 8 oz Mexican Chorizo
- 8 oz Oaxaca Cheese, shredded
- 4 oz Monterey Jack Cheese, shredded
- 1/2 White Onion, finely chopped
- 1 Poblano Pepper, seeded and diced
- 2 cloves Garlic, minced
- 2 tablespoons Cilantro, chopped
- 1 Lime wedges, for serving
- Warm tortillas or tortilla chips, for serving
Cook the Chorizo
Remove the chorizo from its casing (if applicable). In a medium skillet over medium heat, cook the chorizo, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
Sauté Vegetables
Add the chopped onion and diced poblano pepper to the skillet with the cooked chorizo. Cook until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Combine Cheese and Chorizo Mixture
Preheat your oven to 375°F (190°C). In an oven-safe skillet or baking dish, layer half of the Oaxaca cheese, followed by half of the Monterey Jack cheese. Top with the chorizo and vegetable mixture. Then, layer the remaining cheeses on top.
Bake the Queso
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. Broil for the last minute or two for a golden-brown top, being careful not to burn it.
Garnish and Serve
Remove the Queso Fundido from the oven and garnish with chopped cilantro. Serve immediately with warm tortillas or tortilla chips and lime wedges for squeezing.
