Grilled Scallop Skewers with Chili-Lime Glaze

  • 1 lb Large sea scallops
  • 3 tablespoons Lime juice

  • 1 teaspoon Chili garlic sauce
  • 1 teaspoon Soy sauce
  • 2 tablespoons Fresh cilantro

  • To taste Black pepper
  • 8-10 Wooden skewers

Prepare the Scallops and Skewers

First, if using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill. Pat the scallops dry with paper towels.

Make the Chili-Lime Glaze

In a medium bowl, whisk together the lime juice, olive oil, honey, chili garlic sauce, and soy sauce. Stir in the chopped cilantro. Season with salt and black pepper to taste.

Marinate the Scallops

Add the scallops to the chili-lime glaze and toss to coat. Cover the bowl and marinate in the refrigerator for at least 15 minutes, or up to 30 minutes. Do not marinate for longer, as the acid in the lime juice can start to 'cook' the scallops.

Assemble the Skewers

Thread the marinated scallops onto the soaked skewers, leaving a small space between each scallop. You should be able to fit 3-4 scallops on each skewer.
