Baked Chicken Satay Skewers with Spicy Peanut Dip

Ingredients
- 1 lb, boneless, skinless Chicken thighs
- 3 tablespoons Soy sauce
- 1 tablespoon Honey
- 1 teaspoon Sesame oil
- 2 cloves, minced Garlic
- 1/2 teaspoon, grated Ginger
- 1/3 cup Peanut butter
- 1 tablespoon Lime juice
- 1/2 teaspoon (or more to taste) Sriracha
- 2-3 tablespoons Water
- 16 wooden or metal Skewers
Prepare the Chicken
Cut the chicken thighs into 1-inch cubes. Place the chicken in a medium bowl.
Make the Marinade
In a small bowl, whisk together soy sauce, honey, sesame oil, minced garlic, and grated ginger. Pour the marinade over the chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Prepare Skewers
Preheat your oven to 400°F (200°C). If using wooden skewers, soak them in water for 15 minutes to prevent burning. Thread the marinated chicken onto the skewers.
Make the Dipping Sauce
In a separate bowl, whisk together peanut butter, lime juice, sriracha, and water until smooth. Add more water if needed to reach desired consistency. Adjust seasoning to taste.
Bake the Skewers
Place the skewers on a baking sheet lined with parchment paper. Bake for 18-22 minutes, or until the chicken is cooked through and slightly golden brown. Turn the skewers halfway through cooking to ensure even browning.
Serve
Remove from the oven and serve immediately with the spicy peanut dipping sauce. Garnish with chopped cilantro or green onions, if desired.
