Ingredients
  • 3 Ripe Avocados
  • 2 Corn on the Cob
  • 1/2 cup Black Beans
  • 1/4 Red Onion
  • 1 Jalapeño Pepper
  • 2 tablespoons Lime Juice
  • 1/4 cup Cilantro
  • 1/2 teaspoon Cumin
  • to taste Salt
  • to taste Black Pepper

Roast the Corn

Preheat your grill or oven to medium-high heat. Brush the corn on the cob with a little oil and grill or roast it until the kernels are slightly charred and tender, about 10-15 minutes, turning occasionally. Let it cool slightly, then cut the kernels off the cob.

Prepare the Other Ingredients

Rinse and drain the black beans. Finely dice the red onion and jalapeño pepper (remove seeds for less heat). Chop the cilantro.

Mash the Avocados

In a medium bowl, mash the avocados with a fork until they reach your desired consistency. Some prefer chunky, others prefer smoother.

Combine Ingredients

Add the roasted corn kernels, black beans, diced red onion, and diced jalapeño to the mashed avocados. Pour in the lime juice.

Add Seasoning and Cilantro

Stir in the cumin, cilantro, salt, and pepper. Mix gently until all ingredients are well combined.

Taste and Adjust

Taste the guacamole and adjust the seasoning as needed. You might want to add more lime juice, salt, pepper, or jalapeño to your liking.

Serve

Serve immediately with tortilla chips, vegetables, or as a topping for tacos or salads. To prevent browning, press plastic wrap directly onto the surface of the guacamole if you're not serving it right away.

FAQ

  • Can I use canned corn instead of roasting it?

Yes, you can use canned corn, but roasting the corn adds a delicious smoky flavor that enhances the overall taste of the guacamole. If using canned corn, drain it well before adding it to the mixture.
  • Can I make this ahead of time?

Guacamole is best served fresh, but you can prepare it a few hours in advance. Store it in an airtight container in the refrigerator with plastic wrap pressed directly onto the surface to prevent browning.
  • What other beans can I use?

Pinto beans or white beans can be used as a substitution for black beans. The flavor will change slightly, so adjust seasonings to taste.
