  • 3 cloves, minced Garlic

  • 1 large, diced Mango

  • 2 tablespoons, chopped Cilantro
  • 1/2 small, seeded and minced (optional) Jalapeño
  • 1 tablespoon (for salsa) Lime juice
  • To taste Salt
  • As needed Skewers

Prepare the Chicken

Cut the chicken thighs into 1-inch cubes. Thighs are recommended for their juiciness but breast can be used as well.

Make the Marinade

In a bowl, whisk together the coconut milk, lime juice, soy sauce, ginger, garlic, red chili flakes, and brown sugar.

Marinate the Chicken

Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or up to overnight.

Prepare the Mango Salsa

In a bowl, combine the diced mango, red onion, cilantro, and jalapeño (if using). Add lime juice and salt to taste. Mix gently and set aside.

Assemble the Skewers

Thread the marinated chicken cubes onto skewers. Ensure they are not overcrowded for even cooking.

Grill the Satay

Preheat your grill to medium-high heat. Lightly oil the grates. Grill the skewers for 4-5 minutes per side, or until the chicken is cooked through. Internal temperature of chicken should reach 165°F (74°C).

Serve

Remove the skewers from the grill and let them rest for a couple of minutes. Serve immediately with the mango salsa.

The spice level can be adjusted by altering the amount of red chili flakes used. Start with a smaller amount and add more to taste.
  • Can I use a different fruit salsa?

Absolutely! Pineapple, peach, or even strawberry salsa would be delicious with this chicken satay.
