Grilled Chicken Satay with Creamy Peanut Sauce

  • 1.5 lbs Chicken breast
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 3 cloves, minced Garlic
  • 1 tablespoon, grated Ginger
  • 1 tablespoon Lime juice
  • 1/2 cup Peanut butter
  • 1/4 cup Coconut milk
  • 1 tablespoon Rice vinegar
  • 1 teaspoon (or more, to taste) Sriracha
  • 20 wooden or metal Skewers

Prepare the Chicken

Cut the chicken breast into thin strips, about 1/2 inch thick. This will allow the chicken to cook quickly and evenly on the grill. Place the chicken strips in a bowl.

Make the Marinade

In a separate bowl, whisk together the soy sauce, brown sugar, minced garlic, grated ginger, and lime juice. Pour the marinade over the chicken strips and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight. The longer the chicken marinates, the more flavorful it will be.

Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes before grilling. This will prevent them from burning on the grill. Thread the marinated chicken strips onto the skewers, using about 3-4 strips per skewer.

Make the Peanut Sauce

While the chicken is marinating, prepare the peanut sauce. In a saucepan, combine the peanut butter, coconut milk, rice vinegar, sriracha, and a pinch of salt. Cook over medium heat, stirring constantly, until the sauce is smooth and creamy. If the sauce is too thick, add a little more coconut milk to thin it out. Taste and adjust the seasoning as needed.

Grill the Chicken

Preheat your grill to medium heat. Lightly oil the grill grates to prevent the chicken from sticking. Place the chicken skewers on the grill and cook for about 5-6 minutes per side, or until the chicken is cooked through and slightly charred. Be careful not to overcook the chicken, as it can become dry.
