Ingredients
- 4 oz Spanish Chorizo (sliced)
- 4 oz Greek Salami
- 4 oz Prosciutto
- 4 oz Feta Cheese
- 4 oz Halloumi Cheese (grilled)
- 4 oz Manchego Cheese (sliced)
- 1 cup Hummus
- 1/2 cup Tzatziki Sauce
- 1 cup Marinated Olives (mixed)
- 1 cup Roasted Red Peppers
- 1 package Pita Bread or Crackers
- a few Fresh Rosemary sprigs
Grilling the Halloumi
Preheat a grill pan or outdoor grill to medium heat. Slice the halloumi cheese into 1/4-inch thick slices. Grill for 2-3 minutes per side, or until golden brown and slightly softened. Remove from grill and let cool slightly before placing on the board.
Arranging the Meats
Arrange the Spanish Chorizo, Greek Salami, and Prosciutto on the board. Create visually appealing patterns by folding or rolling the prosciutto. Fan out the chorizo and salami for easy access.
Adding the Cheeses
Place the Feta, grilled Halloumi, and Manchego cheeses around the board. Crumble the feta cheese or leave it in a block. Slice the Manchego into thin wedges. Place the grilled Halloumi slices strategically around the board.
Dips and Accompaniments
Place small bowls of Hummus and Tzatziki sauce on the board. Arrange the marinated olives and roasted red peppers around the meats and cheeses.
Serving Suggestions
Serve with warm pita bread or crackers for dipping and pairing. Garnish with fresh rosemary sprigs for an added touch of flavor and aroma.
