Cook Time
20-25 minutes
Servings
12 squares
Ingredients
 • 500 g All-purpose flour
 • 7 g Instant yeast
 • 320 ml Warm water
 • 4 tablespoons Olive oil
 • 10 g Salt
 • 120 g Pesto
 • 50 g Grated Parmesan cheese
 • 10 Cherry tomatoes

Mix the Dough

In a large bowl, combine the flour, instant yeast, and salt. Add the warm water and 3 tablespoons of olive oil. Mix until a shaggy dough forms. Knead the dough for 8-10 minutes on a lightly floured surface, or until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.

First Rise

Place the dough in a lightly greased bowl, turning to coat. Cover with plastic wrap or a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape and Second Rise

Grease a 9x13 inch baking pan with olive oil. Gently deflate the dough and transfer it to the prepared pan. Use your fingertips to spread the dough evenly to fill the pan. Cover the pan and let it rise for another 30 minutes.

Add Toppings

Preheat oven to 200°C (400°F). Use your fingertips to create dimples all over the dough. Spread the pesto evenly over the dough. Sprinkle with the grated Parmesan cheese and halved cherry tomatoes. Drizzle with the remaining 1 tablespoon of olive oil.

Bake

Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and the cheese is melted and slightly browned. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely. Cut into squares and serve warm or at room temperature.
